Science behind the perfect pint

A new laboratory assistant at St Austell Brewery is learning the science behind creating the perfect beer.

Liliana Matos is the newest member of the team at the laboratory, where she spends her days testing batches of beer-lovers’ favourites including Proper Job, Tribute and Korev.

As part of the four-person team, she analyses up to 20 different beers and ales a day, checking everything from PH level to colour.

The 24-year old began working at the brewery in April after moving to Newquay from her native Portugal. A trained chef, Matos has worked in a number of restaurants in Lisbon as well as in a laboratory, testing ingredients for the food industry.

“I do like beer but in Portugal people drink more lager than ale so I am learning about and tasting more as well as gaining an insight into the processes that go into brewing, which is fascinating,” she said.

“It is fantastic to work at St Austell Brewery, everybody here has been so welcoming and I look forward to learning more about the industry whilst also perfecting my English.”
