The Greenbank’s executive chef has been using the enforced downtime to get families in Cornwall cooking creatively during the lockdown.

Nick’s Community Kitchen is a series of interactive cooking demos from Nick Hodges, streamed live on the Falmouth hotel’s Facebook channel.

From leftover breakfast pasties to Thai-inspired fishcakes and chocolate tiffin, Hodges’s aim is to give the people of Cornwall and further afield some fresh ideas for using up store cupboard ingredients and fresh leftovers amid the coronavirus crisis.

“We wanted to create something fun for parents and their children to do whilst they’re off school, to keep the kids entertained and the adults occupied during lockdown,” he said.

“With the aim of filming every Monday, Wednesday and Friday live from my kitchen, I’ll be demonstrating new recipes to share from my family to yours.

“The idea is to share tips on how to use all your old bits and pieces from the fridge and keep it cheap and cheerful, from that random tin of chick peas in the back of the cupboard to supporting our local fisherman with creative fish dishes to shake up your weekly menu.”
