Crantock Bakery consultant and creator of the Posh Pasty Co, James Strawbridge, has been selected to compete in The Great Sausage Roll Off.
Sponsored by Crantock, Strawbridge will join 18 other top UK chefs at the national competition to be held at The Red Lion Pub in south west London on January 28.
Strawbridge has spent considerable time developing his entry and is confident his creation -The Duke – will be a real contender for the title.
He said: “Because the competition is taking place in the south east I wanted to showcase the best ingredients from the south west
“I’ve called it The Duke as a tribute to the Duke of Cornwall. It will feature Duchy venison, award-winning Primrose Herd pork, cranberries and chestnuts soaked in Cornish Orchards’ mulled cider, all encased in a shortcrust pastry seasoned with rosemary.
“It’s a posh sausage roll so, like Posh Pasties, it will be served in a box with its own relish – a pot of sweet and spicy English plum chutney.”
Strawbridge will add a few extra – undisclosed – ingredients and believes he has a secret weapon, which should give him an edge.
“I have the power of crimping and that is how I’m planning on sealing this sausage roll,” he added. “Not only will it be big, meaty, uniquely Cornish, posh and worthy of the title Duke, it will also be beautiful!”
